This tofu marinade was created from, but is different than the Peanut Sauce made with PB2.
Ingredients
- 1 pkg (350g/12oz) firm tofu, frozen, thawed and pressed learn more about tofu here
- 1 cup water
- 5 Tbsp PB2 powder or 3 Tbsp peanut butter*
- 2 Tbsp Chicken Flavored Seasoning
- 1 Tbsp soy sauce
- 1 Tbsp lemon juice
- ½ Tbsp rice vinegar
- sliced green onions, for garnish
Instructions
- Cut tofu into ¼-inch slices and lay pieces in a baking dish.
- To make the marinade add to a personal blender, the water, PB2 powder, Chicken Flavored Seasoning, soy sauce, lemon juice, and rice vinegar. Pour mixture over the tofu. Cover and marinate for a minimum of 30 minutes or as long as overnight.
- Bake covered in preheated 400°F oven for 40-45 minutes. Remove cover and bake for additional 10 minutes. Alternatively, you can use an AirFryer. Remove pieces of tofu from marinade and AirFry at 400°F for 10 minutes or until desired crispness.
- If desired, thicken the marinade sauce with 1 tablespoon cornstarch. How to use Starches as a Thickening Agent.
- Serve with rice or noodles.
