Indonesian Baked Tofu

This tofu marinade was created from, but is different than the Peanut Sauce made with PB2.

Ingredients 

  • 1 pkg (350g/12oz) firm tofu, frozen, thawed and pressed learn more about tofu here
  • 1 cup water
  • 5 Tbsp PB2 powder or 3 Tbsp peanut butter*
  • 2 Tbsp Chicken Flavored Seasoning
  • 1 Tbsp soy sauce
  • 1 Tbsp lemon juice
  • ½ Tbsp rice vinegar
  • sliced green onions, for garnish 

Instructions

  1. Cut tofu into ¼-inch slices and lay pieces in a baking dish.
  2. To make the marinade add to a personal blender, the water, PB2 powder, Chicken Flavored Seasoning, soy sauce, lemon juice, and rice vinegar. Pour mixture over the tofu. Cover and marinate for a minimum of 30 minutes or as long as overnight. 
  3. Bake covered in preheated 400°F oven for 40-45 minutes. Remove cover and bake for additional 10 minutes. Alternatively, you can use an AirFryer. Remove pieces of tofu from marinade and AirFry at 400°F for 10 minutes or until desired crispness.
  4. If desired, thicken the marinade sauce with 1 tablespoon cornstarch. How to use Starches as a Thickening Agent.
  5. Serve with rice or noodles.
