I was inspired by this Black Bean Burger recipe posted on Creation Life’s blog. The torula yeast adds a unique flavor. This is my adapted version.
Yield: 12 patties (about 85 g/3 oz) each
Ingredients
- 1 lg onion, peeled and chopped (about 1 cup/6oz)
- 1 cup/6 oz black beans, drained (instructions to cook your own)
- 1 cup water (can use cooking water from the beans)
- ¼ cup soy sauce
- 6 Tbsp ground flax (1¼ oz)
- 2 Tbsp nutritional yeast flakes
- 2 Tbsp hickory-smoked dried torula yeast by Bakon*
- 1 tsp garlic powder
- ½ tsp ground cumin
- ½ tsp chili powder
- ½ tsp paprika
- ¼ tsp chipotle powder
- 2 cups old fashioned rolled oats
- ¾ cups chopped walnuts (3oz)
Additional Options (I do food dehydration and add these)
- 1 Tbsp dehydrated tomato powder
- 1 Tbsp dehydrated bell peppers flakes
- 2 tsp mushroom powder
- 2 tsp dried crushed kale flakes
- 2 tsp beet powder
- 2 tsp carrot powder
Instructions
- Preheat oven to 350°F.
- Prepare a large baking sheet with parchment paper or silpat and set aside.
- Add onions to a large pan and sauté until onions are soft.
- Mash the beans and add them to the onions then add all of the remaining ingredients. Mix well to combine.
- Cover and set aside and let mixture rest overnight. This will allow for the rolled oats to soak up the moisture and make for a firmer veggie patty.
- Form patties and place on baking sheet. When shaping the patties the mixture will likely stick to your hands. If this happens dip hands in water and shake off the excess.
- Lay parchment paper or silpat over patties to keep them from drying out while in the oven.
- Bake at 350°F for a total of 40-45 minutes, carefully turn patties over after 20 minutes. Cover and return to oven for another 20-25 minutes.
- Serve burger patties as desired. Keep leftover burgers in an air tight container and refrigerate up to 5 days or freeze them. Check this link for more details on cooking, freezing and re-heating veggie burgers.
Notes
- Torula yeast is a natural flavor enhancer which has a hickory smoke flavor. If you can’t find it use ½ tsp hickory liquid smoke. To use mix the liquid smoke with the water then add to the pan with the sautéed onions and beans.
