Ingredients
Use a mixture of vegetables that will equal 15 oz.
- 12 oz left-over cooked brown rice
- 3 oz onion, chopped
- 1 clove garlic, minced
- 3 oz green pepper, diced
- 9 oz crushed tomatoes
- 6 oz water
- 1 Tbsp taco seasoning
- salt and pepper to taste
Instructions
- Sauté onions without oil until they begin to brown then add the garlic. Cook briefly taking care to not let it burn.
- Add green peppers, tomatoes, water, rice and taco seasoning. Simmer until green peppers are cooked and the liquid is absorbed into the rice.
- Add salt and pepper to taste.
- Make into a balanced meal by adding black beans or other protein of choice.
- Makes three servings. Keep leftovers in air tight container up to 5 days in fridge.
