Lentil Salad

This salad is delicious served warm or cold!

Yield: about 6 servings

Ingredients

  • 1 can (398 ml) lentils, drained or 1½ cups cooked lentils or sprouted lentils
  • 1 cup carrot, diced
  • 1 apple, diced
  • ½ cup celery, diced
  • 1 red bell pepper, diced
  • ¼ cup onion, diced (regular, sweet or sliced green onion)
  • ¼ cup chopped parsley or 2 tsp dried

Dressing

  • 6 Tbsp lemon juice or unseasoned rice vinegar
  • ¼ cup maple syrup
  • 1 Tbsp Dijon mustard

Instructions

  1. Add to a large bowl the lentils, apple, carrots, celery, and onion.
  2. Add the salad dressing and toss.
  3. Add fresh chopped parsley and toss to distribute.
  4. If cooking your own lentils, salad can be served warm or cold.
  5. Keep covered in fridge, and eat within 5 days.
