This salad is delicious served warm or cold!
Yield: about 6 servings
Ingredients
- 1 can (398 ml) lentils, drained or 1½ cups cooked lentils or sprouted lentils
- 1 cup carrot, diced
- 1 apple, diced
- ½ cup celery, diced
- 1 red bell pepper, diced
- ¼ cup onion, diced (regular, sweet or sliced green onion)
- ¼ cup chopped parsley or 2 tsp dried
Dressing
- 6 Tbsp lemon juice or unseasoned rice vinegar
- ¼ cup maple syrup
- 1 Tbsp Dijon mustard
Instructions
- Add to a large bowl the lentils, apple, carrots, celery, and onion.
- Add the salad dressing and toss.
- Add fresh chopped parsley and toss to distribute.
- If cooking your own lentils, salad can be served warm or cold.
- Keep covered in fridge, and eat within 5 days.
