Notes/Tips

- Silken tofu is available at most grocery stores, food and Asian markets.
- Mori-Nu makes a shelf stable silken tofu which comes in (340 g/10.8 oz) aseptic boxes. It’s usually easier to find in a health food store.
- This mayo can be made using either the 400 g size or the 340 g size of silken tofu, without adjusting the seasonings.
- For thicker mayo wrap the tofu in a clean tea towel for a couple of hours or as long as overnight. The moisture will be absorbed into the towel.
- Substitute honey ginger vinegar with other flavor of vinegar or leave out.
- If you want make use the mayo as a dressing, then mix in some pickle juice, sauerkraut juice or kimchi juice.
- Change the flavor by mixing in salsa or seasonings like dill, tarragon, basil or oregano.
Comparison Chart
BLE, mayonnaise and fat servings.
In BLE a fat serving includes 1 tablespoon (.5 oz) of mayonnaise or salad dressing. When we make our own, we need to put into consideration that a fat serving has 120 calories. See comparison chart. The benefit of this recipe is that you get a 2 oz serving rather than a ½ oz serving for a similar amount of calories, more nutrition and less fat.
