Ingredients
- 16 oz left over boiled potatoes, small chunks
- 2 oz onions, chopped
- 1 clove garlic, minced
- 8 oz cashew milk (view how to make)
- 1 Tbsp vegetable soup flakes, powdered
- Costco No Salt Seasoning, generous sprinkle
- ¾ tsp dried parsley
- salt & pepper to taste
Instructions
- Add potatoes, onions, garlic, cashew milk, vegetable soup flakes, and Costco No Salt Seasoning to sauce pan.
- Bring to boil, cover with lid, and simmer for 15 minutes, or until onions are tender and the potatoes formed into a thick mixture/sauce.
- Add the parsley, and salt and pepper to taste.
- Makes 3 servings. Serve hot. To make a balanced meal serve with a side of vegetables and a protein.
