*Amaranth (porridge)

Amaranth is a tiny seed that is eaten like a grain. It has an intense, unique earthy flavor with a touch of sweetness. It has a glutinous sticky texture which makes a wonderful porridge.

Makes 4 servings. One serving provides:
1 grain serving

Ingredients

Water ratio for porridge: 1 part amaranth to 5 parts water

  • 4 oz amaranth
  • 20 oz water

Stove Top

  1. Add amaranth and water to pot and bring mixture to boil. Reduce heat, cover and simmer for 20 minutes or until amaranth has softened. Stir occasionally to prevent amaranth from sticking to the bottom of the pot.
  2. Serve as a single grain or cooked and mixed with other grains. (see notes)

Instant Pot

Add amaranth and water to Instant Pot.

Set Instant Pot on manual for 3 minutes, then let pressure drop naturally. When lid is removed, the amaranth will appear very watery because when it was cooking it settled to the bottom of the pot. Use a whisk to mix into a porridge consistency.

Serve as a single grain or cook with another grain or cook then add to another cooked grain.

Notes

  • I like to cook amaranth and teff together. They both take the same amount of time to cook. Leave the water/grain ratio the same.
  • I also like amaranth cooked with rolled oats.
