*Lazy Scalloped Potatoes

Makes 4 servings. Each serving provides:
4 oz potatoes

Ingredients

  • 16 oz left over boiled potatoes, small chunks
  • 2 oz onions, chopped
  • 1 clove garlic, minced
  • 8 oz cashew milk (view how to make)
  • 1 Tbsp vegetable soup flakes, powdered
  • Costco No Salt Seasoning, generous sprinkle
  • ¾ tsp dried parsley
  • salt & pepper to taste

Instructions

  1. Add potatoes, onions, garlic, cashew milk, vegetable soup flakes, and Costco No Salt Seasoning to sauce pan.
  2. Bring to boil, cover with lid, and simmer for 15 minutes, or until onions are tender and the potatoes formed into a thick mixture/sauce.
  3. Add the parsley, and salt and pepper to taste.
  4. Makes 3 servings. Serve hot. To make a balanced meal serve with a side of vegetables and a protein.
