Amaranth is a tiny seed that is eaten like a grain. It has an intense, unique earthy flavor with a touch of sweetness. It has a glutinous sticky texture which makes a wonderful porridge.

Ingredients
Water ratio for porridge: 1 part amaranth to 5 parts water
- 4 oz amaranth
- 20 oz water
Stove Top
- Add amaranth and water to pot and bring mixture to boil. Reduce heat, cover and simmer for 20 minutes or until amaranth has softened.
- Serve as a single grain or cooked and mixed with other grains. (see notes)
Instant Pot
- Add amaranth and water to Instant Pot.
- Set Instant Pot on manual for 3 minutes, then let pressure drop naturally. (The amaranth will be cooked and settled to the bottom of the pot with a layer of water on the top).
- Whisk to incorporate and turn it into a porridge consistency.
- Serve as a single grain or cooked and mixed with other grains. (see notes)
Notes
- Amaranth can be cooked with groat oats or steel cut oats.
- Teff and amaranth can be cooked together. They cook at the same time. Leave the water ratio the same.
