*Spanish/Mexican Rice

Makes 3 servings. Each serving provides:
4 oz grain    5 oz vegetables

Ingredients

Use a mixture of vegetables that will equal 15 oz.

  • 12 oz left-over cooked brown rice
  • 3 oz onion, chopped
  • 1 clove garlic, minced
  • 3 oz green pepper, diced
  • 9 oz crushed tomatoes
  • 6 oz water
  • 1 Tbsp taco seasoning
  • salt and pepper to taste 

Instructions

  1. Sauté onions without oil until they begin to brown then add the garlic. Cook briefly taking care to not let it burn.
  2. Add green peppers, tomatoes, water, rice and taco seasoning. Simmer until green peppers are cooked and the liquid is absorbed into the rice.
  3. Add salt and pepper to taste.
  4. Make into a balanced meal by adding black beans or other protein of choice.
  5. Makes three servings. Keep leftovers in air tight container up to 5 days in fridge.
