Cashew Pear Topping (2 variations)

Cashew Pear Whip – Version 1

Makes about 3 cups

Ingredients

  • ½ cup cashews (70 g/2.5 oz)
  • 1 can (796 ml/ ) pears in juice, drain well
  • 1 tsp vanilla
  • ½  tsp guar gum, optional see note below

Instructions

  1. Add cashews and pears to blender and blend until very smooth. (with VitaMix about one minute)
  2. Enjoy as a topping to any dessert like this Cherry Peach Cobbler.

Notes

  • Guar gum is a natural thickening and stabilizing ingredient. If you don’t have guar gum the pear whip won’t be quite as firm.
  • Pear juice can be added to a smoothie, or mix it with Perrier water for a tasty beverage.
  • Pear juice can be frozen and used later.
  • Use pear juice instead of the water in the No Bake Pumpkin Pie Mousse.

Cashew Pear Cream – Version 2

Yield: about 4 cups

Ingredients

  • ½ cup raw cashews (70 g/2.5 oz)
  • 1 can (796 ml/28 oz) pears canned in pear juice
  • 1 tsp vanilla or almond extract (or ½ tsp almond extract and ½ tsp vanilla)
  • ¼ tsp guar gum*, optional

Instructions

  1. Add cashews, pears with the juice, and the vanilla to blender. Blend until very smooth. 
  2. If desired add the guar gum and blend to incorporate. 
  3. Enjoy as a topping to any dessert, waffles or to drizzle on this Carrot Cake Baked Oatmeal.

Tips

  • If you do not have a high-powered blender like a VitaMix soften cashews by soaking them overnight or soak in boiling water for 10-15 minutes. Discard soaking water. 
  • Guar gum* is a natural thickening and stabilizing ingredient.
