Crunchy Millet Patties/Nuggets

Newstart is a lifestyle program designed for a healthier life. This recipe has been adapted from the Weimar Institute’s NewStart lifestyle cookbook.

Yield: 4 dozen appetizer nuggets

Ingredients

  • 2 cups fresh cooked millet
  • ¾ cup onion chopped fine,
  • ½ cup peanut butter (use crunchy)
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt

Optional Ingredients, add one or all

  • 1 tsp mushroom powder
  • 1 tsp dehydrated tomato powder
  • 1 tsp dehydrated celery powder
  • 1 tsp dehydrated kale powder

Instructions

  1. Add onions to pan and sauté to soften and brown lightly.
  2. Mix and mash into the warm millet, peanut butter, onions and remaining seasonings.
  3. Using a cookie dough scooper, form into appetizer size nuggets or make into patties.
  4. Bake on parchment lined cookie sheet at 375°F for about 30 minutes. (see notes for AirFryer)

Note

  • Set AirFryer to 400°F. After 10-12 minutes, give them a gentle shake to roll them around a bit, then give them another 10-15 minutes.
