Cashew Millet Cream

Yield: about 3 cups


  • ½ cup millet, washed and drained
  • 2 cups water
  • ½ cup cashews
  • ¼ cup maple syrup
  • 1 tsp vanilla


  1. Combine the millet and water and cook until the millet is very soft. Learn more about millet and how to cook. For creamy results use a powerful blender like a VitaMix.
  2. Add the hot cooked millet to a blender* along with the cashews, maple syrup and vanilla.
  3. This sauce will thicken when cooled. If you are not planning to use it right away, then when blending add about ½ cup of water and adjust the sweetness with another tablespoon or two maple syrup.
