Yield: about 3 cups
Ingredients
- 2 cups strawberries or other mixed berries/fruit, fresh or frozen.
- 1 cup apple juice, (set aside 2 Tbsp of the juice)
- 1 Tbsp corn starch or arrowroot powder*
Instructions
- Mix the 2 tablespoons of juice with the starch and cook until thickened. (view more about starch, slurry’s and how)
- Remove from heat and stir in the berries. Allow to cool.
How to use
- On Tropical Cheesecake
- Any Pancakes or Waffles
- Mix in Soy Yogurt
Notes
- As a guideline use 1 tablespoon of starch* to thicken 1 cup liquid. Note, when using frozen berries the juice may thin down the sauce and the starch will need to be adjusted slightly.
- Apple juice is a neutral flavored sweetener for most fruits.
- Depending on which berries or fruit used, some are naturally sweeter while others are more tart. Depending where you are on your sweet tooth journey, you may want to add a tablespoon or two of your favorite sweetener.
