Fruit & Berry Topping – without sugar

Yield: about 3 cups


  • 2 cups strawberries or other mixed berries/fruit, fresh or frozen.
  • 1 cup apple juice, (set aside 2 Tbsp of the juice)
  • 1 Tbsp corn starch or arrowroot powder*


  1. Mix the 2 tablespoons of juice with the starch and cook until thickened. (view more about starch, slurry’s and how)
  2. Remove from heat and stir in the berries. Allow to cool. 

How to use


  • As a guideline use 1 tablespoon of starch* to thicken 1 cup liquid. Note, when using frozen berries the juice may thin down the sauce and the starch will need to be adjusted slightly.
  • Apple juice is a neutral flavored sweetener for most fruits.
  • Depending on which berries or fruit used, some are naturally sweeter while others are more tart. Depending where you are on your sweet tooth journey, you may want to add a tablespoon or two of your favorite sweetener.
