Strawberry Chia Jam

This is a very healthy version to homemade jam!

Yield: 1 cup

Ingredients

  • 1 cup frozen strawberries*, thawed and chopped small
  • 1 Tbsp lemon juice
  • 2 Tbsp cane sugar, or to taste
  • 1 Tbsp chia seeds
  • 2 tsp psyllium

Instructions

  1. Toss strawberries and lemon juice together.
  2. Mix sugar, chia seeds, and psyllium husk together, then sprinkle over berries. Mix well to incorporate. Cover and put in fridge overnight.
  3. Use as a spread or mix into a plant based yogurt or this homemade Soy Yogurt.
  4. Use within 4 to 5 days.

Notes

  • Use other juicey berries, like raspberries.
