No Oil Salad Dressings

3-2-1 by Jane Esselstyn. This is my favourite go to salad dressing, as I always have vinegar, Dijon mustard, and maple syrup handy. What is wonderful about this salad dressing is how the flavour profile will change, depending on the vinegar and type of mustard used.

Flavoured vinegars include: honey ginger, cranberry pear, balsamic, rice, tangerine. Mustards include: Dijon, honey, spicy brown.

3-2-1 Original Recipe by Jane Esselstyn

  • 3 Tbsp vinegar
  • 2 Tbsp fancy mustard
  • 1 Tbsp maple syrup

Instructions

  1. Mix all ingredients in a small bowl and whisk until smooth

Four Variations

Variation one:

  • 3 Tbsp vinegar
  • 2 Tbsp fancy mustard
  • 1 Tbsp maple syrup
  • 1/4 – 1/2 cup applesauce

Variation two:

  • 3 Tbsp vinegar
  • 2 Tbsp fancy mustard
  • 1 Tbsp maple syrup
  • 1 Tbsp soy sauce

Variation three:

  • 3 Tbsp vinegar
  • 2 Tbsp fancy mustard
  • 1 Tbsp maple syrup
  • 1/4 – 1/2 cup applesauce
  • 1 Tbsp soy sauce

Variation four:

  • 3 Tbsp vinegar
  • 2 Tbsp fancy mustard
  • 1 Tbsp maple syrup
  • 1/4 – 1/2 cup applesauce

  • 1 Tbsp nutritional yeast
