Hail to the Kale – this is an old classic recipe by Chef AJ – This recipe is always a hit and it’s an impressive way to introduce people to kale. The original recipe with demo can be found here. This recipe has been adapted to be enough for 1 bundle of curly kale.
Yield: dressing for 1 bundle of curly kale
Ingredients
- 1 bundle curly kale (about 340 gr/12 oz)
- ½ cup almond butter
- ½ cup water
- 2 Tbsp fresh lemon juice
- 1 clove garlic
- fresh ginger (about ½ inch/.25 oz)
- 1 Tbsp soy sauce or tamari
- 2 pitted dates (soak in water if not soft)
- ¼ tsp red pepper flakes
Instructions
- Remove hard stems from kale and cut leaves into small size pieces. Wash kale and spin dry with salad spinner.
- Add all the dressing ingredients to blender and blend until smooth.
- Pour a generous amount of dressing over the kale. Toss well and take a minute to massage the dressing into kale. This is important to break down the tough fiber in kale.
- Leftovers of this salad keep well.
