Hail to the Kale

Hail to the Kale – this is an old classic recipe by Chef AJ – This recipe is always a hit and it’s an impressive way to introduce people to kale. The original recipe with demo can be found here. This recipe has been adapted to be enough for 1 bundle of curly kale.

Yield: dressing for 1 bundle of curly kale

Ingredients

  • 1 bundle curly kale (about 340 gr/12 oz)
  • ½ cup almond butter
  • ½ cup water
  • 2 Tbsp fresh lemon juice
  • 1 clove garlic
  • fresh ginger (about ½ inch/.25 oz)
  • 1 Tbsp soy sauce or tamari
  • 2 pitted dates (soak in water if not soft)
  • ¼ tsp red pepper flakes

Instructions

  1. Remove hard stems from kale and cut leaves into small size pieces. Wash kale and spin dry with salad spinner.
  2. Add all the dressing ingredients to blender and blend until smooth.
  3. Pour a generous amount of dressing over the kale. Toss well and take a minute to massage the dressing into kale. This is important to break down the tough fiber in kale.
  4. Leftovers of this salad keep well.
  5. Leftover salad dressing freezes well.
