This is a delicious tangy blend of red cabbage and apples.

Yield: about 6 cups

  • 4 cups shredded red cabbage (450 g/one pound)
  • 1 ½ cups onions, strips
  • 2 apples, diced
  • 3 Tbsp brown sugar, packed (or use maple syrup)
  • 2 Tbsp white vinegar
  • 2 Tbsp umeboshi vinegar
  • 1 Tbsp caraway seeds, optional

  1. In a large skillet, sauté the cabbage and onions until tender.
  2. In a small bowl, combine the white vinegar, umeboshi vinegar and the sugar. Stir to dissolve the sugar then add it to the skillet with the cabbage and onions.
  3. Add the apples and caraway seeds. Stir to combine. Turn off heat, cover and let sit for 10-15 minutes to let the apples soften and meld the flavors.
