This is a delicious tangy blend of red cabbage and apples.

Yield: about 6 cups
Ingredients
- 4 cups shredded red cabbage (450 g/one pound)
- 1 ½ cups onions, strips
- 2 apples, diced
- 3 Tbsp brown sugar, packed (or use maple syrup)
- 2 Tbsp white vinegar
- 2 Tbsp umeboshi vinegar*
- 1 Tbsp caraway seeds, optional
Instructions
- In a large skillet, sauté the cabbage and onions until tender.
- In a small bowl, combine the white vinegar, umeboshi vinegar and the sugar. Stir to dissolve the sugar then add it to the skillet with the cabbage and onions.
- Add the apples and caraway seeds. Stir to combine. Turn off heat, cover and let sit for 10-15 minutes to let the apples soften and meld the flavors.
Notes
Ume Plum Vinegar – Technically it’s not a vinegar as it contains salt. Adds a salty, fruity, tangy flavor. Great on salads. Also nice on steamed vegetables. Available in most health type food stores. Amaranth Foods carries this item.
