- 1 pkg regular or firm tofu, drain and pat dry (350 gr/12 oz)
- 3 Tbsp nutritional yeast
- 3 Tbsp lemon juice
- 1 Tbsp apple cider vinegar
- 2 tsp maple syrup
- ¾ tsp onion powder
- ¼ tsp garlic powder
- ¾ tsp salt
- 2 tsp dried Italian seasoning
- In a medium bowl, break tofu into pieces. Add remaining ingredients. Mix and mash to a texture similar to ricotta or cottage cheese. Best to leave overnight to blend flavors.
