Tofu Ricotta

  • 1 pkg regular or firm tofu, drain and pat dry (350 gr/12 oz)
  • 3 Tbsp nutritional yeast
  • 3 Tbsp lemon juice
  • 1 Tbsp apple cider vinegar
  • 2 tsp maple syrup
  • ¾ tsp onion powder
  • ¼ tsp garlic powder
  • ¾ tsp salt
  • 2 tsp dried Italian seasoning


  1. In a medium bowl, break tofu into pieces. Add remaining ingredients. Mix and mash to a texture similar to ricotta or cottage cheese. Best to leave overnight to blend flavors. 


Enjoy Ricotta cheese as recipe above or experiment with other dried herbs (eg. dill weed, parsley, dried oregano, or dried basil).
