Using ripe bananas keeps this low fat and creamy delicious.

Yield: 1 Ninja Creami Deluxe Pint/3 cups

Ingredients

  • 2 cups yogurt
  • 1 generous cup strawberries* (140 g/5 oz)
  • 2 very ripe bananas* (170 g/6 oz with peeling removed)
  • ¼ to ½ cup maple syrup
  • 2 Tbsp oat flour
  • scant ¼ tsp Xanthan gum*

Instructions

  1. Mix the oat flour with Xanthan gum and set this aside.
  2. Add to blender the yogurt, banana, strawberries, and maple syrup. Blend just enough to break any big chunks of fruit.
  3. Taste for sweetness and add more as desired.
  4. While blender is on low, add the oat flour mixture and continue blending briefly to incorporate.
  5. Pour mixture into Ninja Creami Deluxe canister and freeze for 24 hours. Be sure to place container on a flat surface so the contents will freeze level.

Processing into Ice Cream – (If not familiar with the Ninja Creami refer to the Quick Start Guide)

When ready to serve ice cream, remove Deluxe Pint from freezer. Install outer bowl and select either Lite Ice Cream or Yogurt mode. When cycle is complete, check. It’s not unusual for the mixture to look crumbly. If this happens then select RE-SPIN.

Note

  • Particially frozen fruit can be used.
  • Xanthan gum helps prevent the formation of ice crystals when frozen.
