Easy, yummy and made with simple ingredients!
Yield: 40-50 bites
Base
- ½ cup rolled oats
- 10-12 Medjool dates, (180-190g), stems and pits removed
- ¾ cup (100g) roasted peanuts
Caramel Filling
- 5 – 6 pitted Medjool dates (100g), stems and pits removed
- ½ – ¾ cup peanut butter
- 1 tsp vanilla or ¾ tsp caramel flavoring
- ¼ tsp salt
Coating
- 1 cup chocolate chips, or 6oz Bakers chocolate
- 1 tsp coconut oil, optional but makes it easier to coat nuggets
Instructions for the Base
- If dates are dry, cover them with hot water and let them soak for 10 minutes then drain off the excess water. Dates should be moist, not dripping wet.
- Add dates, and rolled oats to food processor and process until crumbly.
- Add the peanuts. Taking care to not make the peanuts into powder, process mixture into a coarse textured dough ball.
- Transfer dough to bowl and set aside.
Instructions for the Filling
- Add dates, peanut butter, vanilla, and miso to food processor and process into a smooth dough ball.
Assembly
- These will be coated in chocolate. For easy clean up line a baking pan with parchment paper.
- Using a cookie dough scooper, fill the scooper half full with the filling. Press the dough down firmly into the cookie dough scooper.
- Then fill the remainder of the scooper with the base. Again press the dough in firmly. Release the nugget and place on baking sheet. Continue this process until all the dough is used.
- To coat in chocolate, melt chocolate in a small pot, on very low heat. Alternatively melt the chocolate in a small glass bowl which is sitting in a pot with hot water.
- Dip each nugget, one at a time. Use a fork to lower the nugget into the chocolate and a spoon to move it around and coat it. Then use the fork to lift it out of the chocolate. Allow the excess chocolate to drip off, then transfer the nugget back to baking pan.
- After nuggets are coated put the baking pan in the freezer. Once frozen transfer nuggets to an airtight container and leave them in the freezer until ready to serve. These thaw in about 5 minutes.
